What would be good to get all of the old gasket off of the block side. My father in law said to use a whiz wheel, I was using a razor to scrap it off but I know it has to be very clean before putting on the new head gaskets and heads which were redone.

A REAL heavy duty gasket scraper to get of 95% of it off.
Then keep the remaining hardened residue saturated with acetone while scraping some more.
That works for me.

when you say whiz wheel are you talking about a roloc disc on a diegrinder? I use a variety of scrapers to remove the gasket, roloc disc to clean the surface, lacquer thinner or brake cleaner to clean the deck surface after

Be careful - the whizzers can remove material and make the deck surface uneven. You're better served doing it with razor blades and then just quickly hitting it with the whizzer. You want it down to bare metal - not super shiney clean bare metal. "Super Shiney" can leave waves in the surface.
