Thinking about putting Edelbrock Performer RPM on B engine in my 66 300. Will I have hood clearance issues?

You should if you're talking 361/383. While the Edelbrock Performer RPM is higher than a stock B engine, the stock B engine is shorter than the RB engine which was also used in 66 300s.
depends more on what air cleaner you are running or plan to run but should be fine with most air cleaner options
Btw just saw 440 source has someone making intakes for them now that are edelbrock copies and they make a performer rpm look alike you might be able to save a few bucks on

I have a normal performer on my '66 440, the stock dual snorkel air cleaner just touches the under hood insulation pad.
You would need a drop air cleaner bottom assuming the clearance is the same between my Monaco 500 and your Chrysler's
