Just because he could...but why would you not at least leave the windshield in it? Maybe the car had some roof damage that was beyond repair. I don't know but for 7K I don't want bugs in my teeth.

It has an AZ title which isn't going to convince any DMV to assign plates for a car without a windshield. Heck they won't even assign plates if don't have windshield wipers! LOL
