Are you sure it's not running lean or not enough vacuum advance. I had a 383 in my Challenger, ran hot on the highway. Put a 400 in it still ran hot but acted lean I bumped up a couple of jet sizes on primaries (Holley) and it does not run as hot on highway.

Most carburetor problems are ignition timing, and most cooling/heating problem are airflow. Most want to "move more coolant" and it does not fix the problem. Glad you got it sorted out.
