Looks good, nice work! I started the same process on my car, but stopped because it was to early in my build. I will add several systems, relais etc. and don't want to redo everything.
 
Good stuff here.

When I redid the harness in my 53 Windsor, I laid the old harness out on a piece of plywood and used some finishing nails to lay the pattern of the harness out. I've seen this done in factories where they are building new wire harnesses. Then I replaced the wires one at a time.

When I was done, the harnesses fit just like the original. This is the dash harness.

I done this too in the field. since I had such a long harness to rebuild the paper roll worked best for me since this was a one off project.
