383 with 4 bbl initial fuel mixture setting

Being a reformed small block chevy owner, I've yet to tune a mopar 4bbl on a 383. Going by what I've done it the past, first you set the timing, disconnect vacuum advance and block off, and turn in each screw one at a time until the engine stumbles, and then turn back out how many turns? I did a quick and dirty on my 383 by turning them in until it stumbled, then back out a full turn. Should I turn them out further? I do not yet own a vacuum gauge. Am I remembering things correctly?
 
Vacuum dial here, although I admit I used to do it with the needles also. I like the vacuum dial better, more precise....if you know how much vacuum you should be pulling there's no guess work as with adjusting needles and idle and rpm and blah, blah

Technically you're supposed to set the timing with the vacuum advance blocked off. If you set the timing with the advance hooked up you'll be retarded, and nobody wants a retarded car. You're reformed.
