There are two locations. One is //eatondetroitspring.com , fill out the menu on the front page. When the next page comes up, click on the Plymouth logo at the rh end of the upper tool bar, click on it. That accesses the 1958 Plymouth sales brochure. A few pages down, you'll come to a brochure page which shows the Belvedere, Savoy, and Plaza interiors. All of them are 4dr interiors, though. If the convertible interior matches them, then there is a picture of the pattern on the seats.
The other possibility is in the 1958 Chrysler Parts Manual. In the interior trim section, there is usually a layout of each model's interior, as to seat covers, door trim, and such. Those illustrations would probably have the convertible-specific interior layout, as to seat covers, patterns, and fabrics thereof. Just a line-drawing illustration, though, but if the convertibles are different than the other closed cars, that should indicate that, possibly.
A third possibility is if there might be a 1958 Plymouth Color and Trim Guide in the "Library" section of www.hamtramk-historical.com, or a similar place.
Hope this might help,
