Safely? I'd like to have more space under the Plymouth for doing my frame work, does this seem viable, I'm a pretty good wood worker and they seem extremely simple to make. I would however slight improve on the structure a bit.

Wood is good! Those will work just fine as long as what you're setting them on is firm and dry and level, like cement. You working on a cement slab?

Give or take Matt, it's an old patio, but is very level.

Then those would work just fine, maybe make them a little wider at the base, more of a pyramid.

It may be overkill to some people......but I would still place a couple of jackstands under it while I was under the car just in case. That's just me..... the wood blocks aren't certified or load tested. Even metal jackstands are suppose to be load tested annually.

I'd go wood over those Chinese stands....
You can rock a car and it will fall off a stand.
A sturdy wood piling at each corner is way safer. Just don't be stupid on how you build it.
