Doing a ground up resto on a car that has lots of one model only one year only parts can be a daunting task.
Take lots of pictures of the teardown. Do not throw anything out unless you have spares.
In regards to the brakes...
If your plan is to be original fair weather car and enter the car in the lawn chair races,keep the drums.
Like anything else as long as you maintain them at a regular basis they will be fine.
If she is going to be a summer daily driver and touring across the country,the disc brakes will come in handy.
All of my C's have/had drums and had no incidents.
They do require some respect--plan your stops!!
