I stumbled across a video last week in butterflying and slow cooking a Pork butt and a slicing it like a brisket. I started drooling. It didn’t help that Costco was an enabler as they had the Pork Butts on sale.
I have two big green eggs. I hated that I couldn’t slow cook and fast cook at the same time. I use one about weekly (unless it is below 0 or blizzarding and other stays covered most of the time. I bought both used . I have about $1,200 invested in both which also included the tables, one temperature control, a drywall lift and 10x10 canvas covered gazebo. Plus another $230 for a WiFi Egg genius temperature control (a present I bought for myself last night. )
So I am doing two different flavors. One coated with Maple Syrup and rub smoked over maple, apple, and Cherry ( with a little Oak and Hickory lump charcoal. The second coated with mustard then rub smoked with hickory and Alder, for maybe a little stronger flavor. Put them on around 5:30. Hope they are done for dinner.

Oh, in between I need to re-align my steering wheel. It is a little off after taking out the column and fixing the little hats that hold the shift tube in the column. And need to do some adjustment on my reverse lights.
