Wow ! that's a lot of info about percentages, boilingpoints, heights etc..
Radiatorcap (16psi) and 2 thermostats (195 ánd a 180 F ) are on their way.
But what do you guys think about the temperatures I mentioned in my first post?

What was ambient air temp when it was at 210 if it was 90° I would say it is fine if it is 50° you have a problem.
A 16lbs cap is 16 psi above the atmospheric pressure, so Stan might be near 30 psi on a high pressure day. Someone in Denver would be no where near 30psi with a 16lbs cap.
The atmospheric is considered a wash(or 0) because it is on both sides of the radiator when the cap is off.

Ambient temp at that moment was about 80 F and after a 40 mile ride with max speed around 50...
