No reason not to. With all the work you're doing, it's not like rebuilding the carb is a significant increase in the total size of the job.I trust your experience but I have all rebuild parts already, so I'll give it a try! I have cleaned most of the parts already and when I'm done with that, I will put it back together and then we will see.
And by the way, those urine-soaked parts are good candidates for vinegar soaking.
One additional warning, however: vinegar is also used to remove zinc for cleaning before welding. So not only will you be removing any rust, you will be removing any zinc protective coating. That will mean it will rust very quickly again, and if you are going to be a stickler for originality, you will have to figure in re-coating.
