440 Oil pressure light with hard stopping/cornering

I did the valve stem seals a couple year ago. They were rock hard! Then I replaced the intake gasket which was leaking like a sieve. That helped cut down on the plug fouling, but I still have consumption and now running hotter plugs to burn off the oil. Must be oil control rings. Compression test was done at the same time and all cylinders were about 150 and within a few psi of each other.

Speaking of valve seals. Blew the valve seals on a 318 by overfilling the oil.
 
Your oil pressure is fine. Run the pan full - or even overfilled a quart. If you're worried about windage run the tray. It's cheaper than a pan. But running the oil level lower for power is simply stupid. You will gain more power by flipping the factory air filter lid upside down or replacing with an open element than you might lose through windage. And the risk by beating on it that way is significant.
